Abstract

During the last decades, Honduras has been present in the first places in the ranking of vulnerability and risk to the effects of climate change. In 2020, Hurricanes Eta and Iota and the scourge of the COVID-19 pandemic exacerbated social problems that increased their vulnerability. In the most vulnerable populations in the country, the impact of the poultry sector in terms of food and nutritional security (SAN) is widely recognized, for being the main source of protein of animal origin (meat-egg), for its caloric intake and for its supply of vitamins, minerals and essential amino acids (lysine, threonine, methionine, cysteine, and occasionally tryptophan).
